Last time we were in Finland, I bought a whole grain semolina package. Usually, I make porridge with the semolina, but you can also bake with it. Here I have used it in rolls.
Semlor med Mannagryn
ca 16 st
5 dl vatten
5 msk fullkorns-mannagryn
2 msk olja
1,5 msk dadelsirap
1 tsk salt
7 g torrjäst
ca 10 dl flerkornsmjöl
Koka upp vattnet. Häll i mannagryn, salt, olja och sirap. Låt svalna till 45 grader.
Blanda i jästen och mjöl. Låt jäsa övertäckt i 30 minuter. Baka sedan till semlor, knåda inte mer än nödvändigt. Doppa dem i mannagryn och lägg på en plåt. Låt jäsa ytterligare i 30 minuter. Grädda i 200 graders ugn i ca 15 min.
Rolls with Semolina
about 16 pcs
5 dl water
5 tbsp whole grain semolina
2 tbsp oil
1.5 tbsp date syrup
1 tsp salt
7 g dry yeast
about 10 dl multi-grain flour
Boil the water. Add the semolina, salt, oil and syrup. Allow to cool to 45 degrees C. Mix in the yeast and flour. Allow to rise covered for 30 minutes. Then bake to rolls, knead no more than necessary. Dip them in semolina and place them on a baking sheet. Allow to rise for 30 minutes. Bake in a 200 degree oven for about 15 minutes.
