If you want fresh bread for your weekend breakfast, I recommend baking these night fermented rolls. Very easy and the work effort is minimal. The dough does not need to be kneaded. Very good, so good that I baked them three times within a week :)
Nattjästa Semlor (Frallor)
6-8 st
2,5 dl vatten
1,5 tsk torrjäst
1 msk olivolja
0,5 msk dadelsirap
1 tsk salt
ca. 5,5 dl flerkornsmjöl
Blanda ihop alla ingredienser. Degen ska vara ganska lös. Plasta och ställ in bunken i kylen över natten eller minst 8 timmar. Sätt ugnen på 200 C grader. Ta fram degen och stjälp ut den på ett mjölat bakbord. Knåda inte. Dela degen i bitar med en kniv. Om man vill kan man vända snittytan i sesamfrön. Lägg bitarna på en plåt med bakplåtspapper. Grädda i 15-20 minuter.
Night Fermented Rolls
6-8 rolls
2.5 dl water
1.5 tsp dry yeast
1 tbsp olive oil
0.5 tbsp date syrup
1 tsp salt
approx. 5.5 dl multi-grain flour
Mix all ingredients together. The dough should be quite loose. Cover with clingfilm and put the bowl in the fridge overnight or at least for 8 hours. Heat the oven to 200 degrees C. Put the dough on a floured surface. Do not knead. Divide the dough into pieces with a knife. If desired, you can turn the cut surface in sesame seeds. Place the pieces on a baking sheet lined with baking paper. Bake for 15-20 minutes.
