Before I became a vegetarian, soon 10 years ago, liver casserole was one of my favorite dishes. I even liked to eat it cold :) If there is any dish I have missed during these 10 years, it's liver casserole I have looked at various Finnish blogs that have made vegan versions of the liver casserole. All of these recipes use tartex paté. Tartex is something I have not found in the stores here, but online I was able to order the product. So here and now you get my version on the liver casserole and you know what? The taste reminds me so much of the real casserole, at least as I remember it. Yummy, how happy I am!
Vegan Leverlåda
1 1/4 dl grötris
0,5 l vatten
0,5 tsk salt
1 liten gul lök
200 g sojamaletkött
100 g tartex pastej, naturell
1 1/4 dl havregrädde
0,5 dl russin, blötlagda i 20 minuter
1,5 msk dadel sirap
1 tsk mejram
1/8-1/4 tsk vitpeppar
Koka riset mjukt i vatten och salt tills allt vatten har absorberats. Blanda sedan alla resterande ingredienser i riset. Häll blandningen i en ugnsform och grädda i 200 C i ca 1h.
Vegan Liver Casserole
1 1/4 dl porridge rice
0.5 l water
0.5 tsp salt
1 small yellow onion
200 g soy mince
100 g tartex paté, original
1 1/4 dl oat cream
0.5 dl raisins, soaked for 20 minutes
1.5 tbsp date syrup
1 tsp marjoram
1/8-1/4 tsp white pepper
Boil the rice gently in water and salt until all water has been absorbed. Then mix in all remaining ingredients to the rice. Pour the mixture into an oven safe dish and bake at 200 C for about 1h.
