A creamy sauce with a lot of vegetables and good taste of coconut milk and red curry paste. Serve with rice and a good salad.
Red Lentil Coconut Sauce
0,5 tbsp coconut oil
300 g mixed vegetables (I had Mexican mixture)
1 garlic clove, chopped
4 frozen spinach cubes
2 dl red lentils
4-5 dl veggie broth
1 dl coconut milk or cream
1-2 tsp red curry paste
salt
black pepper
Heat a saucepan with oil and add vegetables, garlic and spinach, fry for 5 minutes. Add lentils and broth and let simmer for 15-20 minutes. Stir in coconut milk, red curry paste and season with salt and black pepper.

0,5 msk kokosnötolja
300 g blandade grönsaker (jag hade mexikansk blandning)
1 vitlöksklyfta, hackad
4 frysta spenatbitar
2 dl röda linser
4-5 dl grönsaksbuljong
1 dl kokosmjölk eller -grädde
1-2 tsk röd currypasta
salt
