Puree soups can be made with different ingredients and this is my latest creation. A soup with oven roasted peppers and lentils. Warming and incredibly good. Serve some bread with the soup and you're good to go.

Paprika-Röda Linsersoppa
3 paprikor
1 röd lök
1 vitlöksklyfta
1 dl röda linser, sköljda
5 dl grönsaksbuljong
salt
svartpeppar
sambal oelek
Dela och kärna ur paprikorna. Lägg dem med snittytan ner på en oljad plåt och rosta dem i 200 C ugn tills de är mjuka och skalet fått färg. Dra av skalen.
Stek lök och vitlök mjuka i kokosolja i en kastrull. Blanda sedan i paprika, linser och buljong. Låt sjuda i ca 20 minuter. Mixa soppan slät med stavmixer. Smaka av soppan med salt, peppar och sambal oelek.
Bell Pepper-Red Lentil Soup
3 bell peppers
1 red onion
1 garlic clove
1 dl red lentils, rinsed
5 dl vegetable broth
salt
black pepper
sambal oelek
Divide and remove the seeds from the peppers. Place them cut side down on an oiled baking sheet and roast them at 200 ° C until they are soft and the skin is charred. Peel off the skin.
Fry the onion and garlic soft in coconut oil in a saucepan. Then add peppers, lentils and broth. Allow to simmer for about 20 minutes. Mix the soup smoothly with a hand held mixer. Season the soup with salt, pepper and sambal oelek.
