Usually I make pie crust using quark. Now I did not have quark at home, so I used mascarpone instead and ohlala how good it was. The crust became more crisp, which probably is because of the fat content in mascarpone. A successful experiment that I will continue to use.

pajbotten
3 dl fullkornsmjöl
1 dl mascarpone
2 msk olja
2 msk mjölk
1/4 tsk salt

1 msk röd lök, hackad
2 paprikor, tärnade
3 frysta spenatkuber
salt
svartpeppar
125 g creme fraiche
1 dl riven ost
2 ägg
1/4 tsk vitlökspulver
salt
Blanda alla ingredienser till pajbotten till en deg. Tryck degen i en form, 20 x 20 cm. Förgrädda pajskalet i 175 C i 10 minuter.
Stek lök, paprika och spenat tills paprikan är mjuk. Krydda med salt och svartpeppar. Blanda creme fraiche, riven ost, ägg och kryddor i en skål och rör ner paprikablandningen. Häll fyllningen på pajbotten och grädda pajen i ca 25 minuter.
