This is a really simple and tasty mixture that goes well as a filling in eg pita. I used bell pepper and zucchini, but you can use the vegetables you have at home. Instead of lentils you can use beans or chickpeas.
Grönsaks-Pepparröra
1 msk hackad röd lök
2 paprikor, röd och gul tärnade
20 cm zucchini, tärnad
2 dl bruna linser, sköljda
2 dl bruna linser, sköljda
halv burk färskost med pepparsmak
salt
Värm en stekpanna och stek alla grönsaker i olja tills de är mjuka. Blanda i linser, färskost och salt.
Vegetable Pepper Mixture
1 tbsp chopped red onion
2 bell peppers, red and yellow diced
20 cm zucchini, diced
2 dl brown lentils, drained and rinsed
2 dl brown lentils, drained and rinsed
half jar pepper cream cheese
salt
Heat a frying pan and fry all vegetables in oil until they are soft. Mix in lentils, cream cheese and salt.
