Today's recipe is a good and tasty filling for example pita or tortilla. In addition, you digest a lot of vegetables, which is always positive. Can you believe, it's already September the 1st, time goes very fast. Let's hope we will have a warm autumn, but you never know how the weather will be. How is the weather right now where you live?
Bean & Vegetable Filling for Pita
filling:
0.5 tbsp coconut oil
1 tbsp red onion, chopped
2 bell peppers, sliced in long slices
8 mushrooms, sliced
3 dl kidney beans
fajita seasoning:
1 tbsp cornstarch
1/2 tsp garlic powder
1/2 tsp cayenne pepper
1/2 tsp cumin powder
1/2 tsp salt
1/4 tsp turmeric powder
1/4 tsp ginger powder
3 tbsp water
Heat the oil in a pan. Add onion and peppers and fry for 5 minutes. Add the mushrooms and kidney beans and fry for another 5 minutes.
Mix the fajita seasoning in a bowl and add water until seasoning is completely dissolved in the water. Add to the pan and cook for 3 more minutes, until most of the water evaporates. Use as filling in pitas or tortillas.
Bön & Grönsaksfyllning till Pita
fyllning:
0,5 msk kokosolja
1 msk rödlök, hackad
2 paprikor, strimlade
8 champinjoner, skivade
3 dl kidneybönor
fajitakrydda:
3/4 msk majsstärkelse
1/2 tsk vitlökspulver
1/2 tsk cayennepeppar
1/2 tsk kumminpulver
1/2 tsk salt
1/4 tsk gurkmejapulver
1/4 tsk gingefärapulver
3 msk vatten
Värm oljan i en stekpanna. Stek lök och paprika i 5 minuter. Tillsätt svamp och bönor och stek i ytterligare 5 minuter.
