If you have left-over mash potatoes, do not throw it away. You can make these moist potato flatbreads. I used whole wheat flour and oats in the batter, but it goes well with other kinds of flour. These stay moist for several days.

3 dl potatismos, kall
3/4 dl mandelmjölk
1,5 msk olja
2 dl fullkorsmjöl
0,5 dl havregryn
1/4-0,5 tsk salt
Blanda ihop alla ingredienser. Smeten kommer att vara kladdig. Forma med mjölade händer 6 st platta bröd och lägg dem på en plåt med bakplåtspapper. Grädda i 225 C i ca 15 minuter.

Jag änvänder potatis så sällan,men då jag ännu bodde i Finland, och min son var liten,så gjorde jag ofta "perunarieska" med potatismos som blev kvar,dock inte vegansk. Dina bröd ser goda ut:)
