A fresh salad with couscous, nectarine and halloumi. If you have not tried the combo of fried nectarine and halloumi, you have to do it now, so good. Peach or strawberries also pairs well with halloumi. A perfect salad for picnics.
Couscous Sallad med Nektarin och Halloumi
150 g couscous
1 3/4-2 dl buljong
1 liten röd lök, hackad fint
15 cm zucchini, tärnad
1 paprika, tärnad
8 körsbärstomater, delade
15 cm gurka, tärnad
salt
svartpeppar
stekt halloumi
stekt nektarin
färsk persilja
pumpafrön
Sätt couscous i en skål och häll på het grönsaksbuljong. Låt stå i 10 minuter. Använd en gaffel för att fluffa upp kornen och bryta upp eventuella klumpar. Hetta upp en stekpanna med kokosolja och stek lök, zucchini, paprika och tomater till de mjuknat. Stek halloumin och nektarinerna tills de fått en fin stekyta. Blanda grönsakerna med couscous och krydda med salt och peppar. Toppa med halloumi, nektariner, persilja och pumpafrön.
Couscous Salad with Nectarine and Halloumi

1 small red onion, finely chopped
15 cm zucchini, diced
1 bell pepper, diced
8 cherry tomatoes, chopped
15 cm cucumber, diced
salt
black pepper
fried halloumi
fried nectarine
fresh parsley
pumpkin seeds
Put the couscous in a bowl and pour over the vegetable broth. Allow to stand for 10 minutes. Use a fork to fluff up the grains and break up any clumps. Heat a frying pan with coconut oil and fry onions, zucchini, peppers and tomatoes until they are softened. Fry halloumi and nectarines until golden broen. Mix the vegetables with couscous and season with salt and pepper. Top with halloumi, nectarines, parsley and pumpkin seeds.
