Today Mother's Day is celebrated in Finland so I want to congratulate my dear mum! Brittle biscuits dipped in chocolate are good with a cup of coffee or tea. I baked them with coconut sugar, but plain white sugar also works. Similarly, you can use regular syrup instead of fiber syrup. The cake shovel you see in the pictures is my grandparents, a wedding gift they received when they got married in year 1946. Now it's my time to take good care of it.
Chokladdoppade Kex

100 g smör, rumstemp.
1 dl kokossocker
1 msk fibersirap
0,5 st äggula
2,5 dl mjöl
1 tsk bikarbonat
smält mörk choklad
Rör ihop smör, socker och fibersirap. Tillsätt äggula och rör runt. Blanda i mjöl och bikarbonat. Forma degen till längder med ca 2 cm i diameter. Grädda dem i 175 C i ca 15 minuter. Skär i bitar när de är varma. När kexen svalnat doppa ena ändan i smält choklad.

Stir together butter, sugar and fiber syrup. Add egg yolk and stir. Mix in flour and bicarbonate. Form the dough to lengths of about 2 cm in diameter. Bake them at 175 C for about 15 minutes. Cut into pieces when they are warm. When the biscuits have cooled, dip one end into melted chocolate.
