Have you tried my sweet lemon squares yet? The squares that will still your sweet tooth. Last I baked them, I used coconut sugar instead of brown sugar and also added apricot jam. I can now tell you that apricot jam is also suitable in these, but a little piece will be good enough. You can serve some vanilla ice cream with these if you like.
Söta Citron-Aprikosrutor
120 g smör, mjukt
1,5 dl kokossocker
2,5 dl havregryn
2 dl vetemjöl
1 tsk bakpulver
en nypa salt
aprikossylt
1 burk sötad kondenserad mjölk
3/4 dl citronsaft
2-3 tsk citronskal
Sätt ugnen på 175 C grader. Blanda smör och farinsocker väl i en skål. Tillsätt havregryn, mjöl, bakpulver och salt, blanda. Klä en 20 x 20 cm form med bakplåtspapper och klappa ut lite mer än hälften av smuldegen över formens botten. Bred på ett tunt lager av aprikossylt.
Blanda kondenserad mjölk, citronsaft och citronskal. Häll fyllningen på botten. Strö resten av smuldegen överst. Grädda i 20-25 minuter. Låt svalna och skär i rutor. Förvaras i kylen. Citronrutorna smakar bäst när de är kalla. Ta ut citronrutorna ur kylen ca 10 minuter innan servering.

2,5 dl rolled oats
2 dl flour
1 tsp baking powder

1 can sweetened condensed milk
3/4 dl lemon juice
2-3 tsp lemon zest
Preheat the oven to 175 C degrees. Mix butter and brown sugar until well combined. Stir in flour, rolled oats, baking powder, and salt. Press little more then half of the crumb mixture into the bottom of a lined 20 x 20 cm baking pan. Spread a thin layer of apricot jam on the crust.
Mix together condensed milk, lemon juice, and lemon zest. Spread onto the crust. Sprinkle the other half of the crumb mixture on top and bake for 20-25 minutes, or until golden brown. Allow to cool and cut into squares. Store in the fridge. These are good eaten cold. Take from the fridge 10 minutes before serving.
