This is a really sweet dessert made with no oven. A cheesecake that you serve from a glass and that has a taste of speculoos cookies. Speculoos cookies are somewhat reminiscent of gingerbread to taste and are popular in Holland and Belgium. I use cookies from the brand Lotus and I can imagine that they are sold everywhere in the world, otherwise Bastogne cookies are an option that goes well in this recipe.
Speculoos no-bake Cheesecake
3 lotus cookies, crushed into crumbs
50 g cream cheese
2 tbsp speculoos spread
1dl heavy cream, whipped
Put the crushed cookies into the bottom of two glasses. With an electric mixer, beat the cream cheese and speculoos spread until smooth. Stir gently in half of the whipped cream. Top the cookie crumbs with the filling. Put in the fridge for 30 minutes. Top with the remaining cream and serve.
