Today's recipe is a cake with the lovley taste combination of licorice and lemon. More recently, I have been very fond of this type of cake. I think that a piece of cake with a cup of coffee is so good. It puts glimpse of everyday life. What do you want with your coffee? The weather has been sunny and warm all week in Amsterdam. Even the weekend will be sunny, so maybe I'm going to enjoy my coffee on the balcony.
Lakrits Citronkaka
100 g smör
0,5 dl kokossocker
0,5 dl steviasocker, Good Good Via Health
2 ägg
1 dl vetemjöl
0,5 dl mandelmjöl
1 tsk bakpulver
skalet och saften av en halv citron
50 g lakritschoklad, smält
Smörj och mjöla en liten bakform. Vispa smör och socker. Tillsätt äggen och vispa. Blanda i mjöl och bakpulver. Ta 2/3 av smeten i en annan skål och blanda i citronsaft och skal. I resterande smet blanda i chokladen. Häll hälften av citronsmeten i bakformen och sedan chokladsmeten och resten av citronsmeten. Dra runt med en gaffel lite så det blir marmorerat. Grädda i 175 C grader i ca 20-30 minuter.
Licorice Lemon Cake
100 g butter
0.5 dl coconut sugar
0.5 dl stevia sugar, Good Good Via Health
2 eggs
1 dl wheat flour
0.5 dl almond flour
1 tsp baking powder
zest and juice of half a lemon
50 g licorice chocolate, melted
Grease and flour a small baking tin. Beat butter and sugar. Add the eggs and mix. Mix in the flour and baking powder. Take 2/3 of the batter into another bowl and mix in the lemon juice and zest. In the remaining batter mix in the chocolate. Pour half of the lemon batter into the baking tin and then the chocolate batter and the rest of the lemon batter. Take a fork and swirl it around the mixture in the tin a few times to create a marbled effect. Bake at 175 degrees C for about 20-30 minutes.
