Sticky muffins are so good! And if they have the taste of chocolate and coffee they will be even more delicious. And that is exactly what today's recipe is; espresso chocolate muffins. One tip is to not bake them too long, because we want them sticky and not dry. It's really yummy to serve the muffins with ice cream, but not a must.
Espresso Chokladmuffins
5 st
50 g smör
0,5 dl kokossocker
0,5 dl steviasocker, Good Good Via Health
1 ägg
1 dl vetemjöl
0,5 dl mandelmjöl
0,5 dl kakaopulver
1,5 tsk espressopulver
0,5 tsk bakpulver
2 msk kaffe
50 g mörk choklad med smak av kaffe, hackad grovt
Smält smöret och låt det svalna. Blanda i sockret. Blanda sedan i resterande ingredienser. Fördela smeten mellan 5 muffinsformar och toppa med chokladbitar. Grädda i 175 C i ca 13-15 minuter. Dom får gärna vara lite kladdiga inuti.

0.5 dl cocoa powder
1,5 tsp espresso powder

50 g dark chocolate with the taste of coffee, coarsely chopped
Melt the butter and let it cool. Stir in the sugar. Then mix in the remaining ingredients. Divide the batter between 5 muffin cups and top with chocolate pieces. Bake at 175 C for about 13-15 minutes. They may well be a little sticky inside.
