Do you remember the espresso bundt cake I baked? It immediately became a favorite. Now I've got another :) Peanut butter bundt cake! If you like peanut butter then this is the cake for you. I even filled the cake with peanut butter dollops. The cake has, as the espresso cake, a good flavor with just the perfect taste of peanut butter. If you're going to bake today, I think you should bake this yummy cake. If you don't like peanut butter, try almond butter instead!
Jordnötssmörkaka
80 g smör, mjukt
1,5 dl kokossocker
1 stort ägg
1 dl vetemjöl
1 dl mandelmjöl
1 tsk bakpulver
2 msk + 1 msk jordnötssmör
2 msk grädde
Vispa smör och socker fluffigt. Tillsätt ägget och vispa lite till. Blanda i mjöl, bakpulver, 2 msk jordnötssmör och grädde. Häll hälften av smeten i en smord och mjölad bakform. Lägg på klickar av jordnötssmör. Lägg på resterande smet. Grädda i 175 C grader i ca 25 minuter. Låt svalna. Dekorera med t.ex jordnötssmör och hackade jordnötter.
Peanut Butter Bundt Cake
80 g butter, softened
1.5 dl coconut sugar
1 large egg
1 dl flour
1 dl almond flour
1 tsp baking powder
2 tbsp + 1 tbsp peanut butter
2 tbsp cream
Beat butter and sugar until fluffy. Add the egg and whisk a little more. Mix in flour, baking powder, 2 tablespoons of peanut butter and cream. Pour half of the batter into a greased and floured baking pan. Put dollops of peanut butter on the batter and top with the remaining batter. Bake at 175 degrees C for about 25 minutes. Let cool. Decorate with eg peanut butter and chopped peanuts.
