Madeira cake reminds me of my childhood and I particularly remember one occasion. It was a sunny, cold winter day. Mom was on out walking on the ice and me and my sister were at home with dad. Dad wanted to surprise mom with a cake, so he baked a madeira cake. I also remember that when the cake was ready, my Dad put it on the windowsill to cool. Good memories :) I do not often bake this cake, but lately I have been fond of this kind of cakes. And I think you appreciate them more as an adult. I do not mean that I have become old :) Do you like madeira cake?
Sandkaka
100 g rumsvarmt smör
1 1/4 dl potatismjöl
2 msk vetemjöl
1 tsk bakpulver
1 ägg
1 dl socker
några droppar punschessens, valbart
Värm ugnen till 175° C. Smörj och mjöla en liten bakform. I en skål vispa ägg och socker fluffigt, ställ åt sidan. I en annan skål rör smöret mjukt. Ha i potatismjöl, mjöl och bakpulver och rör ihop till en smet. Blanda smör-mjölblandningen i äggsmeten.
Häll smeten i bakformen och grädda i mitten av ugnen i 30 minuter. Låt svalna i formen.
Madeira Cake
100g unsalted butter
1 1/4 dl potato flour
2 tbsp plain flour
1 tsp baking soda
1 egg
1 dl sugar
a few drops of punsch essence, optional
Preheat oven to 175 ° C. Grease and flour a baking pan. In a bowl whisk the eggs and sugar until fluffy, set aside. In another bowl stir the butter soft. Add in potato flour, flour and baking powder and mix to a paste. Mix the butter-flour mixture into the egg mixture.
