Do you want really moist and chocolaty brownies, which are also sugar-free and gluten-free, make them with grated zucchini and good chocolate. I grated my zucchini coarsely, but if you want smaller pieces, you can grate it finer. I squeezed out some of the liquid from the zucchini, but not much, because you want to get moist brownies. I have tried sweeteners from different brands and know I have found my favourite from Good Good by Via Health.
Zucchini Chocolate Brownies
100 g coarsely grated zucchini
6 tbsp almond flour
3.5 tbsp unsweetened cocoa
1 egg
0.5 tsp baking powder
unsweetened chocolate chips to taste
Preheat the oven to 175 °C. Grate the zucchini and squeeze out a little liquid. Mix all the ingredients in a bowl and pour the batter in a baking tin (12 x 12 cm) lined with parchment paper. Bake for about 30 minutes. Let cool completely.
