Spinach pancakes are good, but something I do very seldom. When I saw that Elina had made vegan spinach pancakes, I was eager to try them. They became very good and I served homemade lingonberry jam with them, with lingonberries I received from Finland. Grated carrots can also be served with the pancakes.
Spenatplättar
ca 9 st à 12 cm
150 g fryst spenat
2,5 dl vetemjöl
1 dl havregryn
1 tsk bakpulver
1/4-0,5 tsk salt
4,5 dl mandelmjölk
2 tsk olivolja + olja till stekning
lingonsylt till servering
Låt spenaten tina. Blanda sedan i mjöl, havregryn, bakpulver och salt. Tillsätt mjölk och olja. Blanda väl. Låt smeten stå i ca 15 minuter. Värm en stekpanna och tillsätt olja. Häll smet i den varma stekpannan och stek plättar. Servera med lingonsylt.

150 g frozen spinach
2.5 dl flour
1 dl oats
1 tsp baking powder
1/4-0.5 tsp salt
4.5 dl almond milk
2 tsp olive oil + oil for frying
lingonberry jam for serving
Let the spinach thaw. Then mix in the flour, oats, baking powder and salt. Add milk and oil. Mix well. Leave to stand for about 15 minutes. Heat a frying pan and add oil. Pour the batter into the hot pan and fry the pancakes. Serve with lingonberry jam.
