Brown, overripe bananas are perfect to bake with. Another tip is to peel and cut the overripe banana into pieces and freeze and use in eg smoothie or banana ice cream. These cookies are gluten-free and vegan. As a sweetener, I have used fiber syrup from Sukrin and stevia drops. The ripe banana also adds sweetness. This recipe gives soft cookies.
Banana Oatmeal Chocolate Chip Cookies
8 pcs
1 ripe banana, mashed (100 g)
60 g instant oats
60 g old-fashioned rolled oats
20 g coconut oil, melted
10 ml fiber syrup, Sukrin
10 drops vanilla stevia drops
3/4 tsp cinnamon
1/4 tsp baking powder
50 g cacao nibs or chocolate chips
Mash the banana in a bowl and add the rest of the ingredients. Stir until everything is combined. Shape into cookies and bake at 160 C for about 20 minutes or until the cookies are crispy on the edges.
