In the fall, it's a must to bake apple pie or apple cake. I was craving almond paste so I made a filling of it. This kind of filling is also known as frangipane. The pie crust is not so sweet, but it doesn't need to be, because the filling is sweet. I have used both coconut sugar and stevia sugar, but you can only use coconut sugar or the sugar you prefer. By the way I heard that apple day is celebrated on the 25th of September :)
Äppelpaj med Mandelmassa
Pajdeg:
3/4 dl mandelmjöl
1 msk kokosmjöl
1 msk steviasocker
1 tsk fiberhusk
0,5 ägg
0,5 dl kvarg
Filling:
50 g mandelmassa
30 g smör
2 msk kokossocker
2 msk steviasocker
1 msk mandelmjöl
0.5 ägg
äpple, skivat tunnt
Rör ihop alla ingredienser för pajdegen. Tryck degen i två à 10 cm pajformar. Värm mandelmassan och smöret i mikron så att smöret blir mjukt. Blanda sedan i resterande ingredienser. Fördela fyllningen mellan de två pajformarna och toppa med tunnt skivat äpple. Grädda pajerna i 175 C i ca. 25 minuter.

0.5 dl quark

2 tbsp coconut sugar
2 tbsp stevia sugar
1 tbsp almond flour
0.5 egg
apple, sliced thin
Mix all ingredients for the pastry. Press the dough into two à 10 cm pie dishes. Heat the almond paste and butter in the microwave until the butter is soft. Then mix in the remaining ingredients. Divide the filling between the two pie dishes and top with thinly sliced apple. Bake the pies in 175 C for about 25 minutes.

Hi! Looks good, I'vegot all the ingredients but why two small, not one large pie dish?
