Soft cookies with the taste of oats and chocolate. Instead of egg, I used flaxseed egg and I make it by mixing 1 tablespoon ground flaxseed with 2.5 tablespoons of water and let it sit for 10 minutes so that a gel is formed. These tasted good with coffee.
Cacao Nibs Oatmeal Cookies
8 cookies
1 flax-egg (1 tbsp ground flaxseeds + 2 tbsp water)
2 tbsp coconut oil, soft
0.5 dl coconut sugar
1 tbsp coconut blossom syrup
1 3/4 dl oatmeal
3/4 dl spelt flour
1/4 tsp baking powder
1/4 tsp vanilla powder
2 tbsp cacao nibs
Stir together all the ingredients in a bowl. Shape into 8 cookies and bake them in 175 degree oven for about 12 minutes. Remove from the oven and let cool.

1 linfrö-ägg (1 msk malda linfrön + 2 msk vatten)
2 msk kokosolja, mjukt
0,5 dl kokossocker
1 msk kokossirap
1 3/4 dl havregryn
3/4 dl durummjöl
1/4 tsk bakpulver
1/4 tsk vaniljpulver
2 msk kakao nibs
Rör ihop alla ingredienser i en skål. Forma till 8 kakor och grädda dem i 175 graders ugn i ca 12 minuter. Ta ut ur ugnen och låt svalna.
