I found an interesting recipe for pizza crust here, made from soaked quinoa. I was of course compelled to try it myself and I'm very pleased with the taste and consistency of the crust. It's tastes like bread and the next time I will make it thinner to get that pizza feeling. The crust is gluten-free and vegan.
1 ¾ dl quinoa, covered by water and soaked for 6-8 hours (or overnight)
0.5 dl water
1/4 tsp baking powder
0.5 tsp salt
1 tbsp olive oil
Soak the quinoa in water for 6 - 8 hours.
Once you're ready to make the crust, preheat oven to 200 degrees C. Line a 22 cm cake pan with parchment paper and drizzle with some oil in the center. Spread around with your hands until evenly coated and set pan aside.
Thoroughly rinse quinoa, then add to a blender. Add remaining ingredients and blend on high until smooth and creamy. This should resemble a thick pancake batter.
Pour batter into prepared pan and bake for 15 minutes. Remove, flip and return to oven baking for another 10-15 minutes until browned and edges are crispy.
Top with eg tomato sauce, cheese and any other toppings you'd like and bake for 12-15 minutes until cheese has melted and started to brown.
Quinoa Pizzabotten
1 ¾ dl quinoa, täckt av vatten och blötlägg i 6-8 timmar (eller över natten)
0,5 dl vatten
1/4 tsk bakpulver
0,5 tsk salt
1 msk olivolja
Blöt quinoa i vatten i 6 - 8 timmar.
När du är redo att göra pizzabotten, värm ugnen till 200 grader C. Klä en 22 cm bakform med bakplåtspapper som du oljar lätt.
Skölj quinoa och lägg i en mixer. Ha i resten av ingredienserna och mixa till en slät och krämig smet, som påminner om en tjock pannkakssmet.
