You get a creamy, slightly sweet sauce when using oven-roasted peppers with ricotta. It may not be the best looking sauce, but it's delicious and that's what counts. f you think the sauce is too thick, you can add a dash of cream. I served the sauce with zucchini pasta, but it works just as well with regular pasta.
Bell Pepper Ricotta Sauce
3 small bell peppers, different colors and oven roasted
1 red onion, oven roasted
250 g ricotta
1 dl gouda cheese, grated
1 garlic clove, pressed
salt
pepper
Mix all the ingredients with a hand held mixer. Season to taste. Heat the sauce in a sauce pan and pour over pasta or zucchini pasta.
Paprika Ricottasås
3 små paprikor, olika färger och ugnsrostade
1 röd lök, ugnsrostad
250 g ricotta
1 dl goudaost, riven
1 vitlöksklyfta , pressad
salt
peppar
Blanda alla ingredienser med en stavmixer. Krydda efter smak. Värm såsen i en kastrull och häll över pasta eller zucchini-pasta.
