Today's recipe is a sauce that goes well with pasta or as a filling in tortilla. Use the vegetables you have at home and season to taste. These kinds of sauces are good in the sense that you take what you have and can use left over vegetable pieces that might otherwise be thrown away.
Spinach Tomato Sauce
1 red onion, chopped
1 bell pepper, chopped
5 mushrooms, chopped
2 handfuls of fresh spinach
1 can of diced tomatoes
salt
pepper
chili
Fry the onion, bell pepper, mushrooms in a skillet with some coconut oil. Add the spinach and fry for a couple of minutes. Add the tomatoes and let simmer for 15 minutes. Season to taste.
Spenat-Tomatsås
1 rödlök, hackad
1 paprika, hackad
5 champinjoner, hackade
2 nävar färsk spenat
1 burk tärnade tomater
salt
peppar
chili
Fräs lök, paprika och svamp i en stekpanna med lite kokosolja. Tillsätt spenat och stek i ett par minuter. Tillsätt tomaterna och låt sjuda i 15 minuter. Krydda efter smak.
