Tofu patties are something I like to make and they keep well together and does not crumble. You do not need eggs to bind the batter, therefore these are also suitable for vegans. But make sure to use a vegan pesto or make your own. I served my patties served with quinoa-red lentils and tomato sauce spiced with chili.
Tofu Pesto Patties
200 g firm tofu
vegetable oil
1 small red onion, diced
1/8 tsp salt
1 tsp dried oregano
0.5 dl ground almonds
2 tbsp green pesto
3/4-1 tbsp soy sauce
1 tbsp peanut butter
pinch of black pepper
Mash the tofu with a hand blender. Warm the oil in a skillet. Add the onions and saute for 3 minutes. Transfer the onion to a bowl and add the tofu, ground almonds, pesto, soy sauce, peanut butter and pepper. Preheat the oven to 200° C. Lightly oil a baking sheet. Shape the mix into 4 burgers and put them on the prepared baking sheet and bake until firm and browned, 20-30 minutes.
Tofu Pestobiffar
200 g fast tofu
vegetabilisk olja
1 liten rödlök, tärnad
1/8 tsk salt
1 tsk torkad oregano
0,5 dl mandelmjöl
2 msk grön pesto
3/4-1 msk soja
1 msk jordnötssmör
nypa svartpeppar
Mosa tofu med en stavmixer. Värm upp oljan i en stekpanna. Tillsätt lök och stek i 3 minuter. Lägg löken i en skål och tillsätt tofu, mandelmjöl, pesto, sojasås, jordnötssmör och peppar. Värm ugnen till 200 ° C. Olja en plåt. Forma blandningen till 4 biffar och lägg dem på bakplåten och grädda tills de är gyllenbruna, ca. 20-30 minuter.
