I have experimented a lot with protein powder in baked goodiess and today you get a a great recipe. Almond is a taste I like very much and this is reminiscent of the flavor of mazarine. If you don't have protein powder or do not want to use it, you can take a larger amount of almond flour instead. Or maybe replace some with coconut flour. But remember if you use coconut flour it binds liquid easily, so you'll need a smaller amount of that particular flour.
Gluten-Free Almond Cake
makes 2
2 tbsp coconut oil
2 tbsp erythritol or other sweetener
1 egg
2 tbsp heavy cream
0.5 dl almond flour
0.5 dl vanilla protein powder (Muscletech phase 8)
1 tsp baking powder
1/4 tsp almond extract
Stir together coconut oil and erythritol. Add the egg and cream, stir. Then add the rest of the ingredients and stir until smooth. Pour the batter into two silicon molds (á 7 cm) and bake in 175 C degrees for 25-30 minutes.
Glutenfri Mandelkaka
2 st
2 msk kokosolja
2 msk erytritol eller annat sötningsmedel
1 ägg
2 msk vispgrädde
0,5 dl mandelmjöl
0,5 dl vaniljproteinpulver (Muscletech phase 8)
1 tsk bakpulver
1/4 tsk mandelextrakt
Rör ihop kokosolja och erytritol. Tillsätt ägg och grädde, rör om. Tillsätt sedan resten av ingredienserna och rör om tills slät. Häll smeten i två silikonformar (á 7 cm) och grädda i 175 C grader i 25-30 minuter.
