Couscous-Halloumi Salad
250 g couscous
250 ml veg. stock
400g can chickpeas
100 g cherry tomatoes, halved
0,5 zucchini, finely chopped
1 onion, finely chopped
3 tbsp olive oil
3 tbsp red wine vinegar
1 red chilli, deseeded and finely
chopped
fresh basil, chopped
250g halloumi, thickly sliced
Put the couscous in a bowl and pour over
the hot stock. Leave to stand and swell for 10 mins. Mix the chickpeas with the
tomatoes, zucchini, onion, oil and vinegar, finely chopped chillies and basil. Season.
Fry the halloumi for 2-3 mins each side, until golden and lightly charred.
Fluff up the couscous with a fork and mix in the couscous-tomato mixture.
Pile onto plates and top with the warm halloumi.

100 g körsbärstomater, halverade
0,5 zucchini, fint tärnad
1 lök, finhackad
3 msk olivolja
3 msk rödvinsvinäger
1 röd chili, urkärnad och finhackad
färsk basilika, hackad
250g halloumi, tjockt skivad
