Deg
5 dl mjölk
1 paket färsk jäst
2 dl socker
½ msk kardemumma
2 tsk salt
1 ägg
200 g smör eller
margarin, smält
ca 15 dl mjöl

Vaniljkräm (självgjord eller på påse)

Smula ner jästen
i en degbunke. Smält matfettet och tillsätt mjölken och låt det bli
fingervarmt, 37 grader. Rör ut jästen i lite av degvätskan och tillsätt sedan
resten. Tillsätt salt, socker och kardemumma och rör om. Använd gärna elvisp
med degkrokar eller hushållsmaskin för att arbeta in allt vetemjöl i degen.
Degen ska bli mjuk och smidig. Låt jäsa 60 minuter övertäckt.
Blanda vaniljkrämen med det mjuka smöret.
Forma degen till runda bullar och tryck med ett glas, så du får ett djup i bullen. Fyll djupet med vaniljkräm. Låt jäsa ca
30 minuter. Pensla bullorna med ägg. Grädda mitt i ugnen
i 225 grader i 8-10 minuter eller i varmluftsugn 200 grader 10-12 minuter.
Vanilla Buns
Dough

½ tbsp ground cardamom
2 tsp salt

vanilla custard (home made or bought)

Heat milk to 37C.
Stir in yeast, melted butter, sugar, salt, and ground cardamom. Add flour into mixture until dough is firm
and pulls away from the side of your mixing. Cover the dough in the mixing bowl
with a clean towel and let rise until doubled, about an hour. Punch down the
dough, then remove from bowl. On a floured counter, knead dough lightly until
smooth and shiny.
Mix the vanilla custard with the soft butter.
Shape the dough into round balls and press with a glass, so you get a depth in the bun. Fill depth with custard. Cover with towel and allow to rise, about 30 minutes. Preheat oven to 225C. Brush risen buns with egg. Place in the middle of the oven and bake for 8-10 minutes, or until done.
