Spinach is a leafy green vegetable rich in fiber and a source of three important vitamins, vitamin A, folic acid and vitamin K. Spinach contains many minerals but is especially rich in magnesium, iron and potassium. The variety of ways spinach can be eaten and prepared is endless. Spinach is good in various salads and goes well in dishes such as soups, stews, casseroles and gratins. I made a gratin with spinach which turned out very good.
Spinach Bake
3 eggs
1 dl milk
200 g mozzarella, grated
125 g flour
1 clove garlic, minced
salt
pepper
fresh parsley
500 g fresh spinach, chopped
Whisk together eggs, milk, 100 g cheese a and flour. Add garlic, salt, pepper and parsley. Stir in spinach. Pour the mixture into a oven dish and top with the remaining cheese. Bake at 175°C for 25-30 minutes.
Spenatgratäng
3 ägg
1 dl mjölk
200 g riven mozzarella
125 g mjöl
1 vitlöksklyfta, finhackad
salt
peppar
färsk persilja
500 g färsk spenat, hackad
Vispa ihop ägg, mjölk, 100 g ost och mjöl. Tillsätt vitlök, salt, peppar och persilja. Rör i spenaten. Häll blandningen i en ugnsform och toppa med resterande ost. Grädda i 175°C i 25-30 minuter.
