Vegan Coconut Curry Soup
350 g veggies (mushrooms, broccoli, leek, red onion, carrot, bell pepper)
1-2 tbsp green curry paste, adjust for your spice preference
3 dl coconut milk
1 dl veggie broth
0.5 tbsp fresh lime juice
salt
Saute the veggies in a pan with a drizzle of oil for a couple of minutes. Add the curry paste, coconut milk and broth. Cook for 15-20 minutes. Stir in the lime juice.
Vegansk Kokos Currysoppa
350 g grönsaker (svamp, broccoli, purjolök, rödlök, morot, paprika)
1-2 msk grön currypasta, justera efter dina kryddpreferenser
3 dl kokosmjölk
1 dl grönsaksbuljong
0,5 msk färsk limejuice
salt
Fräs grönsakerna i en kastrull med en klick olja i ett par minuter. Tillsätt currypasta, kokosmjölk och buljong. Koka i 15-20 minuter. Rör ner limesaften.
