Det var en tid sedan jag bakade ostkaka och det är ju så gott. Denna känns fräsch och inte för mastig, som vissa ostkakor kan vara. Denna innehåller färskost och vaniljkvarg. Jag blandande även i smält vit choklad. Något som också skulle ha passat med blåbären är citron. Tycker du om ostkaka? It was a while since I baked cheesecake and it's so good. This one feels fresh and not too heavy, as some cheesecakes can be. This contains cream cheese and vanilla quark. I also added melted white chocolate. Something that would also have been delicious to add with the blueberries is lemon. Blåbärs Cheesecake


Botten:

75 g kex (Mariekex)

35 g smör, smält 


Fyllning: 

150 g färskost, Philadelphia

0,5 dl vaniljkvarg 

1/4 dl socker 

1/4 dl maizena

1 ägg 

0,5 tsk vanilj 

50 g vitchoklad, smält

1 dl färska eller frysta blåbär


Klä en rund bakform (14 cm) med bakplåtspapper. Smula kexen och blanda med det smälta smöret. Tryck blandningen i formens botten och lite upp på kanterna. 


Vispa färskost och kvarg. Blanda i socker och maizena. Tillsätt ägg, vanilj och choklad och vispa till en slät smet.  Lägg hälften av blåbären på kexbottnet och häll på fyllningen och de resterande blåbären. Grädda i 175 C i ca 30 minuter. Stäng av ugnen med låt kakan stå inne i ugnen i ytterligare 30 minuter. Låt svalna helt och ställ i kylen i några timmar innan servering. 



Blueberry Cheesecake


Base:

75 g cookies (Marie cookies)

35 g butter, melted


Filling:

150 g cream cheese, Philadelphia

0.5 dl vanilla quark

1/4 dl sugar

1/4 dl cornstarch, maizena

1 egg

0.5 tsp vanilla

50 g white chocolate, melted

1 dl fresh or frozen blueberries


Line a round baking tin (14 cm) with parchment paper. Crumble the cookies and mix with the melted butter. Press the mixture into the bottom of the tin and a little up on the edges.


Whisk cream cheese and quark. Mix in sugar and cornstarch. Add the egg, vanilla and chocolate and whisk to a smooth batter. Place half of the blueberries on the cookies base and pour on the filling and the remaining blueberries. Bake at 175 C for about 30 minutes. Turn off the oven and leave the cake inside the oven for another 30 minutes. Allow to cool completely and refrigerate for a few hours before serving.
