I've eaten a lot of Brussels sprouts lately, but it's so good. I like it cooked, but wanted to vary so I made fritters of them. It was successful and very good!
Brussels Sprouts Fritters
7 pcs
250 g brussels sprouts, stem removed
1 red onion
1 egg
1 tbsp oat flour
1 tsp psyllium husk
0.5 tsp salt
1/4 tsp garlic powder
1 pinch of black pepper
coconut oil
Cut off the ends of the Brussels sprouts and pull off any yellow outer leaves. Put the Brussels sprouts in a food processor together with the onion and process until shredded. Add the egg, oat flour, psyllium and spices. Let sit for 5-10 minutes. Heat a skillet with coconut oil and fry the fritters until golden brown on both sides.
Brysselkål-Biffar
7 st
250 g brysselkål, stammen avlägsnad
1 rödlök
1 ägg
1 msk havremjöl
1 tsk psyllium husk
0,5 t salt
1/4 tsk vitlökspulver
1 nypa svartpeppar
kokosolja
Skär av stammen på Brysselkålen och ta bort gula yttre blad. Lägg kålen i en matprocessor tillsammans med löken och bearbeta tills den strimlas. Tillsätt ägget, havremjöl, psyllium och kryddor. Låt stå i 5-10 minuter. Värm en stekpanna med kokosolja och stek biffarna tills gyllenbruna på båda sidor.
