Here is my version on a vegan Jambalaya. Jambalaya is a dish where you mix the rice in the sauce itself, instead of having it on the side. Good, very tasty and you can vary the spices according to your own preference. Have a nice day!
Vegan Jambalaya
1 small red onion, chopped
0.5 red bell pepper, diced
200 g soya minced meat
1 can chopped tomatoes (400 g)
1 tsp curry
1 tsp paprika
1/4 tsp garlic powder
1/8 tsp cayenne powder
salt
black pepper
2 dl cooked rice
1 handful fresh spinach
Add the chopped veggies to a saucepan with some oil and cook for 2 minutes. Add the tomatoes and the spices and stir. Let cook for 15 minutes. Then add the rice and the spinach and cook for a couple of minutes.
Vegan Jambalaya
1 liten rödlök, hackad
0,5 röd paprika, tärningar
200 g soja-maletkött
1 burk hackade tomater (400 g)
1 tsk curry
1 tsk paprika
1/4 tsk vitlökspulver
1/8 tsk cayennepulver
salt
svartpeppar
2 dl kokt ris
