The strawberries are now so good and I buy mine from the market. I like to eat them as they are or have them on my quark, in my smoothie bowl or I bake with them. This cake is moist and so good with a sweet strawberry flavor. I used a quark that also contains yogurt, but you can use what you have on hand. My quark-yogurt had a strawberry flavor. This is a very good summer cake.
Strawberry Coffee Cake
1 large egg
0.5 dl vegetable oil
0.5 dl starwberry quark-yogurt
1 dl coconut sugar
1 3/4 dl plain flour
1 tsp baking powder
50 g diced strawberries
Preheat oven to 175 C. Grease and flour a small loaf pan. In a bowl whisk together egg, oil and quark-yoghurt. Add the sugar, flour, baking powder. Gently mix in the strawberries, do not over mix. Pour the batter into the prepared pan. Bake the cake for 25-30 minutes or until a skewer inserted into the middle comes out clean.

0,5 dl jordgubbs kvarg-yoghurt
1 dl kokossocker
1 3/4 dl vetemjöl
1 tsk bakpulver
