I have baked blondies, as a variation to the popular brownies. These also become so good and white chocolate is good in baked goodies. Sweet and delicious :) The coconut sugar gives a caramel taste to blondies.
Blondie Muffins
8 muffins
80 g butter, melted
1 1/4 dl coconut sugar
3/4 dl granulated sugar
1 large egg, room temperature
1 tsp pure vanilla extract
2 dl wheat flour
0.5 tsp baking powder
one pinch of salt
1 dl white chocolate chips
Preheat the oven to 175°C. In a mixing bowl, stir together the melted butter, coconut sugar, and granulated sugar until well combined. Stir in the egg and vanilla extract until combined. Add the flour, baking powder, and salt and mix, then fold in the white chocolate chips. Divide the batter into muffin cups. Bake for 13-15 minutes or until the top is set and lightly browned. Remove from the oven and let cool completely.
