Happy Midsummer! Time flies, I can't understand how it's possible :) If you have followed me for a longer time, you know that I like to bake with ricotta. Ricotta makes the baked goodies wonderfully smooth and soft. It makes them melt in the mouth. Ricotta is so good and if you have not used it in pastries it is time to do it now. You will not be disappointed.
Körsbär-Ricottamuffins
7st
40 g smör, smält
1 dl strösocker
1 litet ägg
80 g ricotta
1 dl vetemjöl
3/4 tsk bakpulver
1/4 tsk rom-arom
körsbär, färska och urkärnade
Blanda smält smör och socker i en skål. Tillsätt ägget och blanda väl. Blanda i ricotta och sedan resterande ingredienser. Blanda tills allt är slät. Häll smeten i muffinsformar och tryck i varje muffins ett körsbär. Grädda i 175 C i ca 15 minuter. Låt svalna.
Cherry Ricotta Muffins
7 pcs

1 dl sugar
1 small egg
80 g ricotta
1 dl wheat flour
3/4 tsp baking powder
1/4 tsp rum aroma
cherries, fresh and pitted
Mix melted butter and sugar in a bowl. Add the egg and mix well. Stir in ricotta and then the remaining ingredients. Mix until everything is smooth. Pour the batter into muffins cups and press a cherry in each. Bake at 175 C for about 15 minutes. Let cool.
