Jackfruit has become a basic food in our home. I like the consistency very much and with different spices you can flavour it the way you like it. This time I made a spicy pulled jackfruit as a filling in bread. So good! Have you tried jackfruit?
Pulled Jackfruit Burgers
oil
1 small red onion, chopped
1 clove garlic, minced
280 g jackfruit in brine, drained and rinsed
1 tsp chili powder
0.5 tsp paprika
0.5 tsp cumin (jeera)
salt
1 dl tomato sauce
1 dl water
2 tbsp barbecue sauce
Heat the oil in a skillet over medium heat. Add in the onion and garlic, and cook until softened, about 4-5 minutes. Add the jackfruit (chopped into smaller pieces), spices, tomato sauce, water and barbecue sauce. Stir to combine. Cover and simmer for 15 minutes. Remove the lid and continue to cook, stirring frequently, until the sauce has thickened, about 10 minutes. Add more spices if needed.

olja
1 liten rödlök, hackad
1 vitlöksklyfta, hackad
280 g jackfrukt i saltlösning, sköljd
1 tsk chilipulver
0,5 tsk paprika
0,5 tsk spiskummin
salt
1 dl tomatsås
1 dl vatten
2 msk barbecuesås
Värm oljan i en stekpanna över medelvärme. Tillsätt i lök och vitlök, och stek i ca 4-5 minuter. Lägg till jackfrukten (hackad i mindre bitar), kryddor, tomatsås, vatten och barbecuesås. Blanda. Täck med ett lock och låt sjuda i 15 minuter. Ta av locket och fortsätt sjuda och rör om ofta tills såsen har tjocknat, ca 10 minuter. Krydda mera om det behövs.

I've seen jackfruit recipes (always as a bun filling) every so often for the past couple of years now, but never thought to give it a try. I love how you've turned it into a vegan pulled pork version!
