I got inspiration for today's recipe from here and it was very good and creamy. Reminds me a bit of lasagna and gets better the following day. Serve with a green salad.
Krämig Aubergine-Zucchinigratäng
3-4 portioner
1 aubergine, skivad
1 zucchini, skivad
250 g körsbärstomater
olja
salt
peppar
250 g ricotta
1 dl parmesan, riven
0,5 msk torkade örter
1/4 tsk vitlökspulver
salt
Lägg aubergine- och zucchiniskivor på en plåt tillsammans med körsbärstomaterna. Häll lite olivolja över dem och krydda med salt och peppar. Rosta grönsakerna i 175 C ugn i ca 25 minuter. Medan grönsakerna är i ugnen blanda ihop ricotta, parmesan, örter, vitlök och salt i en skål. Täck botten på en ugnsform med aubergine- och zucchiniskivor och tomater. Toppa med klickar av ricottablandningen. Gör två lager till av grönsaker och ricotta. Toppa allt med riven ost. Grädda i 175 C ugn i 20 minuter.
Creamy Aubergine-Zucchini Bake

0.5 tbsp dried herbs
1/4 tsp garlic powder

Put aubergine and zucchini on a baking sheet together with cherry tomatoes. Pour some olive oil over them and season with salt and pepper. Roast the vegetables at 175 ° C oven for about 25 minutes. While the vegetables are in the oven mix together ricotta, parmesan, herbs, garlic and salt in a bowl. Cover the bottom of an oven dish with eggplant and zucchini slices and tomatoes.
