This meringue cake is a childhood memory for me. My grandmother always baked it for parties and it was a favorite among everyone. My grandmother makes the filling with a ready-made powder mix (available in Norway and it's called kakefyll rom), but I do not have it so I had to improvise. And the end result was exactly as the ones I ate as a child. So incredibly good. We call this cake the wrinkle cake :)
Maräng Romtårta
150 g mjukt smör
150 g strösocker
5 äggulor
150 g vetemjöl
1,5 tsk bakpulver
1 dl mjölk
maräng:
5 äggvitor
200 g strösocker
fyllning:
5 dl vaniljkräm
3 dl vispad grädde
rom essans
Vispa smör och socker mjukt. Vispa i äggulorna, en i taget. Blanda växelvis i mjöl, bakpulver och mjölk. Bred smeten i en långpanna med bakplåtspapper.
Vispa äggvitorna i 30 sekunder, tillsätt sedan socker lite i gången medan du vispar. Bred marängen över smeten och grädda i 160 C grader i ca 30 minuter i nedre delen av ugnen. Låt svalna.
Blanda vaniljkräm med vispad grädde och tillsätt rom. Dela tårtan i två delar och bred vaniljkrämen på den ena. Lägg på den andra tårtdelen. Tårtan är godast kylskåpskall.
Meringue Rum Cake
150 g soft butter
150 g sugar
5 egg yolks
150 g wheat flour
1.5 tsp baking powder
1 dl of milk
meringue:
5 egg whites
200 g sugar
filling:
5 dl vanilla custard
3 dl whipped cream
rum essence
Beat the butter and sugar fluffy. Beat in the egg yolks one at a time. Mix alternately in flour, baking powder and milk. Spread the batter on a baking sheet lined with parchment paper.
Beat the egg whites for 30 seconds, then add sugar a little at a time while whisking. Spread the meringue over the batter and bake at 160 ° C for about 30 minutes in the lower part of the oven. Let cool.
Mix vanilla custard with whipped cream and add rum. Divide the cake into two pieces and spread vanilla custard mixture on one. Top with the second cake piece. The cake is best eaten fridge cold.
