Moist cakes that gives you spring feelings because of the apricot jam. I chose to make three small cakes, but it is of course ok to to make one big, too. Serve the cakes with whipped cream and apricot jam.
Aprikoskaka
3 små
100 g smör, mjukt
0,5 dl kokossocker
0,5 dl steviasocker, Good Good Via Health
1 ägg
3/4 dl vetemjöl
0,5 dl potatismjöl
0,5 tsk bakpulver
0,5 dl aprikossylt
Blanda smör och socker i en bunke. Tillsätt ägget och blanda väl. Blanda sedan i resterande ingredienser. Fördela smeten i 3 silikonformar (á 7cm i diameter) eller i en större form. Grädda i 175 C i ca 25-30 minuter.

0.5 dl apricot jam
Mix the butter and sugar in a bowl. Add the egg and mix well. Then mix in the remaining ingredients. Spread the batter in 3 silicone molds (á 7cm in diameter), or in a larger baking pan. Bake at 175 C for about 25-30 minutes.
