It's unbelievable how a soup with a few ingredients can be so good. This was particularly good. I don't know what made it extra good, perhaps the sweet potato? Warming and delicious! Serve it preferably with cottage cheese and crisp bread, and you have the perfect lunch or dinner after a day out in the cold.
Vegetable Puree Soup
2 small sweet potatoes
2 carrots
1 head of broccoli
1 vegetable stock cube
water
coconut milk / cream / cream cheese
salt
pepper
Peel the potatoes and carrots and cut into pieces. Put them in a pan along with broccoli, vegetable stock cube and enough water to almost cover the vegetables. Let boil until the vegetables are tender. Pour off some of the cooking water and mix the vegetables with a hand blender. Add some coconut milk and season to taste.
Grönsakspurésoppa
2 små sötpotatisar
2 morötter
1 broccoli
1 grönsaksbuljongtärning
vatten
kokosmjölk / grädde / färskost
salt
peppar
Skala potatis och morötter och skär i bitar. Lägg dem i en kastrull tillsammans med broccoli, grönsaksbuljong och tillräckligt med vatten så att det nästan täcker grönsakerna. Låt koka tills grönsakerna är mjuka. Häll ut en del av kokvattnet och mixa sedan grönsakerna med en stavmixer. Ha i lite kokosmjölk och krydda efter smak.
