Happy fourth advent! Now it's not many days left until Christmas Eve. I look forward to celebrating Christmas with family in Finland and I hope there will be a lot of snow. Today's recipe is a dry cake, yes that's what we call it in Finland, but that does not mean it is dry :) The flavor of the cake is of course gingerbread and I even added pieces of white chocolate.
Pepparkaka-Vit Chokladkaka
2 ägg
1 1/4 dl kokossocker
100 g smält smör
2 dl vetemjöl
1 dl mandelmjöl
4 st smulade pepparkakor
1 msk pepparkakskrydda
1,5 tsk bakpulver
0,5 dl mandelmjölk
50 g (speculoos) vit choklad, hackad
Rör ihop ägg och socker i en skål. Blanda sedan i smör, mjöl, pepparkakssmul, pepparkakskrydda, bakpulver och mjölk. Rör tills allt är blandat. Blanda till sist i chokladen. Häll smeten i en smord och mjölad bakform. Grädda kakan i 175 C i ca 45-50 minuter. Låt svalna.

2 eggs

100 g melted butter
2 dl flour
1 dl almond flour
4 crumbled gingerbread
1 tbsp gingerbread spice
1.5 tsp baking powder
0.5 dl almond milk
50 g (speculoos) white chocolate, chopped
Stir together the eggs and sugar in a bowl. Then mix in the butter, flour, gingerbread crumbs, gingerbread spice, baking powder and milk. Stir until well blended. Add lastly the chocolate. Pour the batter into a greased and floured cake mold. Bake at 175 C for about 45-50 minutes. Let cool.
