Now that it's colder outside, I like to eat warming soups and this time I was hungry for "minced meat soup." Minced meat soup is part of my childhood and my version without meat, was just as good. I had light soy protein, but if you want to get the soup to resemble minced meat use dark soy protein. I chose to use sweet potatoes, which gave a good twist.
Vegan "Maletkött" Soppa
3-4 portioner
400 g sötpotatis, skalad och tärnad
300 g soppgrönsaker (purjo, lök, morot, selleri)
1,5 dl texturerat sojaprotein, kross
1 l vatten
1 grönsaksbuljongtärning
1 grönsaksbuljongtärning
persilja
salt
svartpeppar
Lägg sötpotatis, soppgrönsaker, sojaprotein, vatten och buljongtärning i en kastrull och låt sjuda tills potatisen är mjuk, ca 20-30 minuter. Blanda i persilja och krydda efter smak.
