I notice when it gets colder outside, I like to make soups. Soups are warming and delicious and gives you even more warmth when using hot spices. In the soup I have used a new spice blend that I never tried before from Nude Spice, Hot & Tangy. This spice blend includes salt, herbs, pepper, chilli, cumin, thyme, black pepper, onion and garlic. The spice blend is handmade, gluten-free, vegan, and contain no preservatives. When I use spices with a lot of taste, I think it is good to also use coconut milk that takes the top of the heat.
Lins-Kokossoppa
kokosolja
1 röd lök, hackad
2 morötter, hackade
1 burk krossade tomater
2 dl röda linser
2 dl vegetarisk buljong
2 dl kokosmjölk
salt
sambal oelek
Stek röd lök och curry i kokosolja någon minut. Tillsätt morötter, tomatkross, linser, buljong och kokosmjölk och låt sjuda i ca 20 minuter eller tills morötterna är mjuka. Smaka av och tillsätt ev mera kokomjölk/vatten.
Lentil Coconut Soup
coconut oil
1 red onion, chopped
2 carrots, chopped
1 can of crushed tomatoes
2 dl red lentils
2 dl vegetable broth
2 dl coconut milk
salt
Fry the red onion and curry in coconut oil for a minute. Add carrots, crushed tomatoes, lentils, broth and coconut milk and simmer for about 20 minutes or until the carrots are tender. Season to taste and add more coconut milk / water if needed.
