En saftig bostonkaka med färskost och blåbär i fyllningen. Jag minns att jag gjorde en liknande kaka för många, många år sedan och den var precis så god som jag kom ihåg. Jag dekorerade kakan med en glasyr gjord på florsocker och vatten och i halva glasyren tillsatte jag blåbärspulver från holistic.se

A moist bun cake with cream cheese and blueberries in the filling. I remember I did a similar cake for many, many years ago and it was just as good as I remembered. I decorated the cake with an icing made with powdered sugar and water, and in half the glaze I added blueberry powder from holistic.se.


Blåbär-Vanilj Bostonkaka

2,5 dl mandelmjölk
25 g färsk jäst eller 1 påse torrjäst (11g)
100 g kokossocker 
0,5 msk kardemumma
3/4 tsk salt
100 g mjukt smör / vegan smör
ca 9 dl vetemjöl 

fyllning
100 g färskost med smak av vanilj eller vegan färskost
0,5 dl florscoker
ca 4 dl blåbär, frysta
potatismjöl

Värm mjölken fingervarm för färsk jäst eller 42 C för torrjäst. Blanda jästen i mjölken och tillsätt sedan socker, kardemumma, salt och hälften av mjölet. Knåda degen en stund med en köksassistent eller för hand. Blanda sedan i resten av mjölet och det mjuka smöret. Knåda degen tills den är slät och lossnar från skålens sidor. Låt degen jäsa i ca 30 minuter.

Dela degen i två delar och kavla ut delarna till ca 30 x 60 cm. Blanda färskost med florsocker och bred på degen och toppa med blåbär som blandats med potatismjöl. Rulla ihop degen från långsidan. Skär i önskad storlek och lägg bullarna i en springform. Lämna mellanrum mellan bullarna och låt dem jäsa ytterligare i 30-60 minuter.

Värm ugnen till 220 C och pensla bullarna med ägg. Strö på pärlsocker. Grädda i 15-20 minuter. Låt svalna och dekorera med florsockerglasyr om du vill. 



Blueberry Vanilla Cream Cheese Bun Cake

2.5 dl almond milk
25 g fresh yeast or 1 packet dry yeast (11g)
100 g coconut sugar 
0.5 tbsp cardamom
3/4 tsp salt
100 g soft butter / vegan butter
about 9 dl wheat flour

filling
100 g cream cheese with vanilla flavour or vegan cream cheese
0.5 dl icing sugar
4 dl blueberries, frozen
potato starch

Warm the milk to lukewarm when using fresh yeast or 42 C for dry yeast. Mix the yeast in the milk, then add sugar, cardamom, salt and half of the flour. Knead the dough for a while with a kitchen assistant or by hand. Then mix in the remaining flour and soft butter. Knead the dough until it is smooth and comes off from the sides of the bowl. Let the dough rise for about 30 minutes.

Divide the dough into two pieces and roll out to about 30 x 60 cm. Stir together cream cheese and icing sugar and spread on the dough. Top with blueberries mixed with potato flour. Roll up the dough from the long side. 

Cut into desired size and place the buns in a springform. Leave space between the buns and let them rise for another 30-60 minutes. Do the same with the other bun piece.

Preheat the oven to 220 C and brush the buns with egg. Sprinkle with pearl sugar. Bake for 15-20 minutes. Allow to cool and decorate with icing sugar glaze if you want.
