There are many different berry and fruit powders on the market right now and the last one I tried is pitaya powder from rawnice.com. They are the first in Scandinavia with this powder. The powder has a neutral, slightly sweet flavor and is ideal to have in smoothies, raw balls, yogurt, pastries ... Pitaya powder is rich in iron, calcium and antioxidants, and it gives a great color. I made a yummy cookie dough with the powder and it is good to eat as a snack.
Pitaya Vanilla Cookie Dough
3 dl cannellini beans
1.5 scoops vanilla protein powder of your choice
2 tbsp powdered peanut butter
2 tbsp almond flour
2 tbsp almond milk
2 tbsp peanut butter
2 tsp or more pitaya powder (rawnice.com)
Place all the ingredients in a bowl and mix with a hand blender until smooth. Store in the fridge.
Pitaya Vanilj Kakdeg
3 dl cannellini bönor
1,5 skopor vanilj proteinpulver
2 msk jordnötssmörpulver
2 msk mandelmjöl
2 msk mandelmjölk
2 msk jordnötssmör
2 tsk eller mer pitayapulver (rawnice.com)
Lägg alla ingredienser i en skål och blanda med en stavmixer tills slät. Förvara i kylen.

Vilken härlig färg.Färsk pitaya se så vacker ut men har knappast smak.
