I had mascarpone and cream at home and wanted to make a good dessert of them. I whipped them and added coffee and stevia drops and suddenly I had a dessert ready in no time. One could well use this mousse as a frosting for cupcakes or cakes. Scrumptious!
Coffee Mascarpone Mousse
equal parts of mascarpone and heavy cream
espresso
sweetener of choice (icing sugar, stevia...)
Whip together mascarpone and cream and add a dash of espresso and sweetener. Pipe into glasses and top with cocoa powder or ground coffee. Put in the fridge before serving.

ditt val av sötningsmedel (florsocker, stevia...)
Vispa ihop mascarpone och grädde och tillsätt en skvätt espresso och sötningsmedel. Lägg i glas och toppa med kakaopulver eller malet kaffe. Ställ i kylen innan servering.
