To my friend's birthday I baked a fresh cake with a deep flavour of lemon. The recipe comes from Jamie Oliver and is available here. I did not have "self-raising flour ', so instead I used regular flour and added baking powder, 1.5 tsp. This is the perfect cake to serve on midsummer. Top the cake with various berries or fruit to make it extra summery. The cake feels very fresh and fluffy, not at all heavy as one might think when you look at the ingredients. I really like citrus fruits in baked goodies, and this is no exception.
