If you do not like overly sweet baked goodies, then this is the cake for you. The cake tastes mildly of lemon and gets a soft and smooth flavor of the ricotta. It is also gluten-free.
Almond Ricotta Cake
2 eggs
65 g coconut sugar
150 g almond flour
125 g ricotta
1 tsp vanilla
zest from 1 lemon
pinch of salt
Separate the egg yolks from the egg whites. Whip the yolks with the sugar and then add almond flour, ricotta, vanilla, lemon zest and salt. Stir. Whip the egg whites until stiff and stir them gently with the rest of the ingredients. Pour the batter into a cake tin (14 cm) lined with parchment paper. Bake at 160 C degrees for 30-35 minutes. Let cool. Serve with cream and berries.
